I have never liked milk straight out of the carton. As my grandmother used to say endearingly, “weird child.” Alas, there is a wealth of protein to be found in milk products, perhaps too much for a vegetarian to snub her nose at.
And so I have expanded my palate to include all kinds of dairy products: yogurt, milk hidden in things and cottage cheese, blended away from its gross curdy texture.
Today, when craving a protein rich breakfast, I found myself with no time to cook eggs. Inspiration came from the classic cereal and milk breakfast. I threw this parfait verion together in a snap.
In the mix:
“Milk” Layer: 1/2 cup cottage cheese, 1/4 cup almond milk, 1 tablespoon ground flax seeds, all pureed in the VitaMix.
“Cereal” Layer: 1 package Kay’s Naturals Cinnamon Protein Cookie Bites.
“Topping” Layer: 5 oz. Florida strawberries
This breakfast has approximately 24 grams of protein. Who’s up for a healthy twist on an old school treat?
